- 700 grams Salmon (without skin)
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- 2 Tbsps clarified butter
- 150 grams Bean sprout
- Pumpkin seed oil
Preparation steps
1.
Divide salmon into serving pieces, sprinkle with lemon juice and season with salt and pepper.

Rinse bean sprouts and drain well.
3.
Sear salmon in clarified butter on each side for about 3 minutes. Arrange on plates and garnish with the bean sprouts. Drizzle with the pumpkin seed oil before serving.
