60 grams Walnut
50 grams dried Apricot
1 handful scallions
1 tsp pink Peppercorns
300 grams cream cheese
sweet ground paprika
1 Grapefruit
1 generous pinch ground Turmeric
1 tsp liquid honey
1 tsp spicy Mustard
salt
freshly ground peppers
1 shallot
1 Lettuce
2 handfuls Fresh herbs (such as basil, chervil, parsley, nettle)
Edible flowers for garnish (such as nasturtium, daisies)

Preparation steps

1.

Finely chop the walnuts and apricots and sprinkle with the chives on a plate. With your fingers, crush the pink peppercorns and sprinkle on the plate. Using a teaspoon, form small balls of the cream cheese and coat with the nut apricot mixture. Sprinkle with paprika and chill.

Peel the grapefruit, rinse and cut the flesh fro the membranes.  Squeeze the juice from the remaining pulp and mix with the turmeric, honey and mustard and season with salt and pepper. Peel the shallots, finely chop, and add to dressing and season to taste.

Rinse the lettuce, spin dry and tear into small pieces. Rinse the herbs, shake dry and remove from their stems.

4.

Arrange the lettuce with herbs and grapefruit on plates. Drizzle with the dressing and top with the cheese balls. Serve garnished with edible flowers.
