For the burgers
4 Hamburger bun
700 grams Salmon (without skin)
2 tsps lemon juice
2 Tbsps Quark
1 egg
6 Tbsps breadcrumbs
salt
freshly ground pepper
vegetable oil
For the sauce
200 grams Yogurt (0.1% fat)
2 Tbsps chopped Dill
2 Tbsps lemon juice
salt

Preparation steps

1.

For the burgers, remove any bones from the salmon with tweezers. Coarsely chop the salmon. Peel and chop shallots. Mix shallots, salmon, lemon juice, quark, egg and 3 tablespoons breadcrumbs until well blended. Season with salt and pepper.

From salmon mixture into 4 patties and coat in remaining bread crumbs. Cook in hot oil until golden brown on both sides.

For the sauce, mix the  yogurt with dill and lemon juice. Season with salt and pepper.

Serve the burgers in the buns with lettuce and some sauce. Garnish with dill sprigs and lemon wedges.
