250 grams Pastry flour
1 pinch salt
400 milliliters milk
2 eggs
clarified butter (for cooking)
5 sheets clear gelatin
3 Tbsps finely chopped Dill
500 grams sliced Smoked salmon
150 grams Crème fraiche
1 tsp lemon juice
1 tsp Mustard

Preparation steps

1.

Whisk together flour, milk, eggs and salt and let stand about 30 minutes. In a pan with some butter, cook thin pancakes and allow to cool.

Soak gelatin in cold water.

3.

Mix half of the smoked salmon with crème fraîche, lemon juice, mustard and dill. Puree and season with salt and pepper.

4.

Drain the gelatin, dissolve in a pan with a little water over low heat and stir into the salmon mixture.

5.

Spread the pancake thinly with the salmon mixture, cover with remaining sliced smoked salmon and roll up. Cover with plastic wrap and allow to set in the refrigerator.  To serve, cut into slices and arrange on plates with lettuce leaves, lemon wedges and dill.
