Preparation steps

Rinse lemon balm, shake dry, pluck leaves from stem and chop coarsely. Rinse scallions, trim and cut into thin rings. Rinse lemon in hot water, wipe dry and finely grate zest. Squeeze juice from lemon. Rinse salmon, pat dry and cut into about 2 cm (approximately 1 inch) pieces.

Cook pasta in a pot of boiling salted water until al dente.

Pour oil in a hot pan and sauté scallions for 2-3 minutes. Then add wine, lemon juice and cream. Add salmon and let simmer over medium heat for about 6 minutes. Then add creme fraiche and lemon zest, stir and season with salt and pepper.

Drain pasta. Arrange pasta in bowls and cover with the sauce. Serve with lemon wedges if desired.
