Watercress makes a delicious addition to salmon pizza and is full of good ingredients such as essential oils that are effective against colds and iron for healthy blood formation. If you do not get watercress, you can also refine the pizza with leek or rocket. If you like it a little nutty, you can add walnut halves to the salmon pizza.

For the dough
10 grams fresh Yeast
350 grams Pastry flour
salt
Pastry flour (for work surface)
For the topping
3 garlic cloves
150 grams Sour cream
2 Tbsps grated Parmesan
salt
freshly ground peppers
freshly grated Nutmeg
2 Red onions
1 handful Watercress
200 grams Smoked salmon
coarse Sea salt

Preparation steps

1.

For the dough: dissolve yeast in approximately 175 ml (approximately 3/4 cup) of lukewarm water. Combine with flour and 1 teaspoon of salt and knead into smooth dough which leaves the sides of the pan. Cover and let rise for about 45 minutes in a warm place.

Line two baking sheets with parchment paper.

Roll out dough on a floured surface and knead, divide into 4 pieces and roll each into a large circle. Place 2 circles on each baking sheet.

Peel garlic, chop finely and combine with sour cream. Add Parmesan and season with a little salt, pepper and nutmeg. Peel onions, halve and cut into fine strips. Spread pizzas with cream and top with onions. Bake in preheated oven at 220°C (approximately 425°F) for about 10-15 minutes or until golden brown.

Rinse watercress and shake dry. Tear salmon into pieces.

Top pizzas with salmon and watercress. Season with a little coarse salt and freshly ground pepper, serve.
