- For the tartare:
- 150 grams fresh Salmon
- 1 scallion
- 1 tsp olive oil
- pink peppercorns
- grated Lime zest
- 2 stalks Dill
- For Lachsspießchen:
- Wasabi powder
- 4 slices pickled ginger
- vegetable oil
- Wooden skewer
Preparation steps

Rinse the salmon fillet and pat dry. Cut the salmon fillet into 4-4x2 cm (approximately 2x1 inch) slices and set aside. Cut the remaining salmon into small cubes. Rinse the scallion and finely chop. Mix the diced salmon with scallion, olive oil, pink peppercorn and lime zest. Rinse the dill and shake dry. Set some dill aside for the garnish and chop the rest. Mix with the salmon tartar. Spoon the salmon tartar into small jars and refrigerate.

Rub the salmon slices lightly with wasabi powder. Wrap a slice of ginger around each salmon slice. Heat the oil in a small nonstick pan. Saute the salmon slices on each side for about 30 seconds. Place each slice on a wooden skewer and place across the salmon tartar. Serve garnished with dill.
