Ingredients
- For the puree
- 600 grams starchy potatoes
- 2 Apple
- salt
- 125 milliliters milk
- 2 Tbsps butter
- freshly ground peppers
- For the radicchio
- 1 small Radicchio
- 100 grams Bacon (in slices)
- 2 Tbsps vegetable oil
- For the salmon
- 600 grams Salmon
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- marjoram (for garnish)
Preparation steps
Peel the potatoes and boil in salted water until knife-tender, about 30 minutes. Peel and core the apples. Cut into pieces and add to the potatoes for about the last 10 minutes of cooking time.
Rinse the radicchio, discard core, and cut leaves into strips. Fry the bacon in hot oil until golden brown. Mix in the radicchio and sauté briefly. Add pepper to taste. Set aside.
Rinse the salmon, pat dry, cut into four equal pieces and season with salt and pepper. Sauté in oil until golden brown for 3–4 minutes on each side.
Heat milk and butter in a saucepan. Drain the potatoes and apples. Let the excess water evaporate. Mash with a potato masher along with the hot milk and butter to make a fine puree. Season with salt and pepper. Divide apple mashed potatoes between 4 plates. Put a piece of salmon on each, and distribute the bacon and radicchio on top. Garnish with a sprinkle of marjoram to serve.
