Ingredients

- 2 Salmon (fillets, each about 36 ounces; with skin)
- 2 lemons
- 1 bunch Fresh herbs (eg. as parsley, dill, basil, tarragon)
- Sea salt
- peppers
- 1 Tbsp olive oil
- For wrapping
- Bakers twine
- Aluminum foil
Preparation steps
Rinse salmon fillets under cold water and pat dry.
Rinse lemon in hot water, pat dry and cut into thin slices.
Rinse herbs, shake dry, chop and mix with 1 tablespoon each sea salt and pepper.
Place 1 salmon fillet, skin side down, on the work surface. Top with lemon slices and sprinkle with herbs. Place remaining salmon fillet, skin side up, on top.
Tie salmon with kitchen twine in several places. Season the exterior lightly.
Brush a large piece of aluminum foil with oil. Wrap fish in the foil and seal as tightly as possible. Place on the oven rack in a preheated 175°C / 350°F oven and bake for about 60 minutes.
