Noteworthy is the high content of vitamin C in limes, as well as their content of essential oils, zinc, iron, folic acid, vitamin A and vitamin E. Salmon is one of the fatty fish and provides abundant anti-inflammatory omega-3 fatty acids.
Outside of strawberry season, a salsa with the same amount of fresh tomatoes also goes wonderfully with the tender salmon. Just omit the honey then.

- 10 ozs Strawberries
- 2 ¼ ozs red shallots (2 red shallots)
- 1 green chili pepper
- 1 bunch Basil
- 4 cilantro
- 2 Limes (juice)
- 2 Tbsps honey
- 2 Tbsps olive oil
- salt
- peppers
- 18 ozs salmon fillets (with skin, 4 salmon fillets)
Preparation steps
Clean, wash and chop strawberries. Peel shallots and cut into fine rings. Halve chili peppers lengthwise, remove seeds, wash and cut into fine rings.
Wash herbs, shake dry and pluck leaves; finely chop half of them. Mix strawberries with shallots, chopped herbs, chili rings, lime juice, honey, 1 tablespoon olive oil, salt and pepper and let stand for 20 minutes.
Meanwhile, rinse salmon fillets and pat dry. Heat remaining oil in a frying pan. Fry salmon fillets in it first on the skin side, then on the other side for 6-8 minutes at medium heat. Season with salt and pepper. Arrange salmon fillets with strawberry ragout and sprinkle with remaining herbs.
