1 Tbsp olive oil
1 ½ ozs Parmesan
1 egg
½ oz butter (1 tablespoon; room temperature)
1 ¼ ozs whole grain breadcrumbs (2 TBSP.)

22 ozs salmon fillets (4 salmon fillets)

Preparation steps

1.

Wash wild garlic, shake dry and puree with oil. Finely grate Parmesan cheese. Separate egg (use egg white elsewhere). Mix egg yolk, butter, parmesan, wild garlic oil and breadcrumbs to a spreadable mass, season with salt and pepper.

Rinse salmon fillets, pat dry, and place on a baking tray lined with baking paper. Spread with wild garlic paste and press down well. Bake in preheated oven at 200 °C / 400 °C for 15 minutes.
