- 500 grams starchy potatoes

- 2 yellow onion
- 50 grams streaky Bacon
- 250 grams canned Sauerkraut
- 1 bay leaf
- 2 allspice
- ½ tsp Caraway
- freshly ground peppers
- 1 egg
- 30 grams cornstarch
- Nutmeg
- 3 Tbsps vegetable oil

Peel, rinse and cook the potatoes in a pot of boiling salted water until knife-tender, 25-30 minutes.

Meanwhile, peel the onion and chop finely. Cut the bacon into cubes. Heat a skillet over medium and add the bacon and the onion, and cook, stirring frequently until th

Drain the potatoes, let dry and press through a potato ricer. Mix the potato with the sauerkraut and the egg and season with salt, pepper and nutmeg and mix well.

Form the potato mixture into 8 patties. Heat the oil in a skillet and saute the patties until golden brown on both sides. Drain on paper towels and serve.
