500 grams Tomatoes
300 grams onions
2 garlic cloves
4 Tbsps olive oil
2 sprigs fresh thyme
1 sprig rosemary
1 sprig Sage
1 Tbsp apple cider vinegar

Preparation steps

1.

Quarter peppers, remove seeds and ribs and rinse. Cut peppers into strips. Peel and dice onion. Peel and finely chop garlic. Heat oil in a large frying pan. Add onions and sauté until translucent. Strip herbs from stems and coarsely chop.

Add garlic and peppers to onions. Season with salt and stir in vinegar. Cover and simmer about 10 minutes over medium heat. Rinse and quarter tomatoes and stir with vegetables. Uncover pan and cook vegetables about 5 minutes over high heat. Season with salt and pepper.
