4 trout (each about 180 grams)
salt

1 Tbsp Pastry flour
2 Tbsps clarified butter
40 grams butter
40 grams slivered almonds
1 Tbsp lemon juice

Preparation steps

1.

Rinse trout fillets, pat dry and cut in half. Season with salt and pepper and coat the skin side with flour. Heat butter in a pan and fry trout skin side down until golden brown, 2-3 minutes. Turn trout and cook for 1-2 minutes. 

2.

Heat the clarified butter and almonds in a separate pan until lightly browned. Add lemon juice and season with salt and pepper.

3.

Remove trout from pan and drain on a paper towel. Arrange trout on plates and serve with almond butter.
