For the crust
1 kilogram baking potatoes
1 onion
1 tsp vegetable oil
100 grams Pastry flour
2 eggs
125 grams Quark
salt

2 red-skinned Apple
2 onions
1 tsp vegetable oil
1 bunch parsley
100 grams grated Gouda

Preparation steps

For the crust: Rinse potatoes, cover with water and boil for 25 minutes. Drain and peel. Peel and mince onion. Heat oil and a pan and cook onion. Press potatoes through a ricer and let cool. Combine potatoes, flour, eggs, quark and onions. Season with salt and pepper. Knead to form a smooth dough. Shape the dough into small cakes, making a depression in the middle of each cake.

For the filling: Rinse apples, peel, core and dice. Peel and mince onion. Heat oil and cook onion and apple for 2 minutes. Add apples and onion to the center of each cake. Put cake in a greased baking dish and sprinkle with cheese. Rinse and mince parsley, sprinkle on cakes. Bake cakes in an oven preheated to 180°C (approximately 350°F) for 25 minutes. Remove from oven, let cool slightly and serve.
