Preparation steps

1.

For the dough, stir the yeast with 125 ml (approximately ½ cup) of lukewarm water and sugar until smooth. Mix the flour with dissolved yeast, salt and olive oil, and knead with the dough hook of the electric mixer to a smooth, pliable dough. Cover the dough and let rise for 45 minutes in a warm place.

2.

For the filling, peel the onions and chop. Rinse and cut the apples into quarters, peel, remove the core, and cut into wedges.

Heat butter in a wide saucepan and saute the onions in it until soft. Add the apples, season with salt and pepper, and simmer for about 3 minutes. Remove from heat and let cool slightly.

3.

Knead the dough again on a floured surface. Divide the dough into 2 portions and roll out each portion into a circle of about 22 cm (approximately 9 inches) diameter. Divide the filling equally over each rolled dough.

4.

Fold the dough circles into semicircles and firmly press the edges well to form the calzones. Place the calzones on a baking sheet lined with parchment paper and let rise covered for another 15 minutes.

Bake the calzones in a preheated oven at 225°C (fan: 205°C, gas mark 4) (approximately 435°F) for about 25 minutes.
