Preparation steps

Butter the souffle dishes well. Preheat the oven to 200°C (approximately 400°F).

Separate the eggs. Squeeze the garlic clove through a garlic press. Beat the egg yolks with the butter, garlic and nutmeg until fluffy and smooth. Then alternately stir in the grated cheese, heavy cream and crème fraîche. Beat the egg whites and sift in the flour, then add to the egg yolk mixture. Season with a pinch of salt. Pour the mixture into the ramekins and bake for about 15 minutes, until golden brown. Serve immediately.
