- 250 grams Pastry flour
- ½ tsp salt
- 1 tsp sugar
- 1 Tbsp Baking powder
- ½ tsp baking soda
- 20 grams butter
- 1 Tbsp rosemary (finely chopped)
- 2 Tbsps dried Tomatoes (finely chopped)
- 100 grams Goat cheese
- 100 milliliters milk
- Pastry flour (for working surface)
- milk (For brushing)
Preparation steps

In a bowl, mix the flour, salt, sugar, baking powder and baking soda. Add slices of butter. Fold in the goat cheese, tomatoes and rosemary, gradually add the milk and knead to a smooth dough. Add a little more milk if the dough is too dry.

Cover the dough and chill in the refrigerator for about 20 minutes. On a floured surface, roll the dough out until about 2 cm (approximatley 3/4 inch) thick. Cut out cookies about 6 cm (approximately 2 1/3 inch) in diameter, using cookie cutters if desired. Place on a parchment paper-lined baking sheet and let sit for 5 minutes. Brush with the milk. Bake in preheated oven at 200°C (approximately 400°F) for about 10-15 minutes. Remove and let cool.
