2 red Pepperoncini (mild)
1 shallot
1 garlic clove
3 ozs apple cider vinegar
salt
2 Tbsps brown sugar
2 Tbsps honey
½ Orange (juice)
7 ozs Vegetable broth
1 Tbsp lemon juice
cayenne pepper
36 ozs Savoy cabbage
1 handful cilantro
2 Tbsps vegetable oil

Preparation steps

Rinse and chop the pepperoncini. Peel and finely chop the shallot and garlic. In a pot, cook the shallot, garlic, pepperoncini, sugar, honey, orange juice, broth, apple cider vinegar and a pinch of salt. Allow to simmer for 20 minutes, stirring occasionally, until the sauce is slightly thickened. Remove the pot from the heat and season with salt, lemon juice and cayenne pepper. Allow to cool.

Rinse and cut the cabbage into strips. Blanch the cabbage in salt water for 4-5 minutes. Rinse the cilantro, shake dry and pluck off the leaves. Rinse the cabbage in cold water, mix with the cilantro, the oil and the prepared sauce. Season the salad and serve arranged on plates.
