1 Tbsp Walnut oil
1 splash lemon juice

Preparation steps

1.

Cook the spaghetti in boiling salted water until al dente according to package instructions. Drain, reserving some pasta water.

Meanwhile, rinse the cabbage, remove the core and cut the leaves into strips. Blanch in boiling salted water about 4-5 minutes until tender but still firm to the bite. Then drain and rinse with cold water.

For the walnut pesto, peel the garlic. Coarsely chop the walnuts and puree with the garlic and two types of oil in a blender with a little pasta water until sauce becomes creamy. Season with salt, 1 dash of lemon juice and pepper.

4.

Grate the Parmesan. Mix the spaghetti and cabbage with half the Parmesan and walnut pesto and arrange on plates. Sprinkle with remaining Parmesan and serve.
