Preparation steps
Peel shallots and very finely chop.
Rinse radicchio, spin dry and cut into fine strips.
Rinse pears and cut into quarters, remove the core and cut into approximately 1/2-inch cubes. Roughly chop the walnuts.
Lightly toast walnuts in a non-stick pan over medium heat. Remove nuts from the pan and wipe the pan clean.
Cook pasta in boiling salted water according to package instructions.
Add oil to the pan and sauté shallots and pear cubes over medium heat for 5-6 minutes, stirring frequently. Add walnuts.
Add soy creamer and let simmer until creamy, about 2-3 minutes. Season with salt and pepper.
Strain the pasta and drain well. Stir pasta and radicchio into the sauce. Mix well and serve with plenty of freshly ground pepper.
