2 smoked trout
1 Tbsp scallions

Preparation steps

Crack eggs into a bowl, stir in cream and season with salt and pepper. Heat 1 teaspoon butter in a pan, add egg mixture and let thicken into a scrambled egg. Divide eggs into 8 servings. In the meantime, toast baguette on both sides under the broiler, watching carefully.

Cut smoked trout fillets into 8 pieces. Butter the toasted bread and season with a little salt. Place scrambled eggs on toast and finish with trout. To serve, sprinkle with chives and serve immediately.
