3 ½ ozs soft butter
9 ozs Semolina flour
4 eggs

Preparation steps

Place the semolina flour in a bowl and season with salt and nutmeg. Add the butter and eggs and mix until smooth. Let stand 30 minutes.

In a saucepan, bring the broth to a boil and reduce to a simmer. Using 2 moistened teaspoons shape the semolina mixture into oblong dumplings. Drop the dumplings into the simmering broth and cook over low heat until the dumplings are firm, 15-20 minutes.

Serve the soup and dumplings in bowls and sprinkle with parsley.
