9 ozs Zucchini (about 4)
4 Tbsps olive oil
ground paprika
7 ozs Feta
1 ¾ ozs Shelled pistachio
salt

Preparation steps

1.

Clean the zucchini, wash and cut in half lengthwise. Slightly cut flesh crosswise with a knife.

Brush cut surfaces with olive oil and sprinkle with paprika powder. Bake in a preheated oven at 200 °C / 400 °F for 20 minutes with the cut surface facing up.

In the meantime, crumble the feta with your hands and spread it on the zucchini halves when the 20 minute cooking time is over. Then bake for another 15 minutes. Meanwhile, chop the pistachios.

4.

Remove the zucchini from the oven and arrange on plates. Sprinkle with pistachios, season with salt and pepper and serve.
