1 pc ginger (15 grams)
2 garlic cloves
1 red chili pepper
2 scallions
5 Tbsps Lime juice
4 Tbsps light soy sauce
5 Tbsps light sesame oil
16 King prawn (320 grams; ready to cook)
200 grams Wild rice
salt
1 Tbsp Apricot jam (15 grams)
1 Star fruit

Preparation steps

1.

For the marinade, peel and chop ginger and garlic. Rinse chile and scallions and chop finely. Mix everything with 4 tablespoons lime juice, 3 tablespoons soy sauce and 4 tablespoons of oil.

Rinse shrimp under cold water and pat dry. Drizzle with 3 tablespoons chile marinade and leave for 20 minutes.

Meanwhile, cook wild rice in boiling salted water according to package instructions.

For the dip, mix remaining chile marinade with jam and season with remaining soy sauce and lime juice.

5.

Rinse star fruit and cut into 8 slices. Thread each slice with 2 shrimp onto skewers.

6.

Heat the remaining oil in a nonstick skillet. Cook skewers over medium heat for about 6 minutes, turning once.

7.

Serve wild rice with skewers and dip on 4 plates.
