Ingredients

4 juicy Pear
4 Tbsps Orange juice
8 Tbsps lemon juice
4 Tbsps sugar
freshly grated Nutmeg
2 Star anise
2 tsps Red pepper flakes
For the shrimp
20 fresh shrimp
salt
freshly ground peppers
½ Tbsp Ghee (clarified butter)

Preparation steps

For the relish, peel the pears, quarter and remove the core and coarsely chop. Place in a saucepan and bring to a boil together with the orange and lemon juice, sugar, 1/2 teaspoon nutmeg, star anise, chile and 4 tablespoons water. Simmer over low heat while stirring for about 15 minutes. Pour the hot chutney into two sterilized jars (200 ml capacity) (approximately 1 cup) and seal. Keep chilled for up to 1 week.

Heat the ghee in a pan and fry the prawns until cooked through. Season with salt and pepper.

Serve the shrimp with the chutney and toasted white bread.
