- 14 ozs Spaghetti
- ⅔ cup Dried Tomatoes (in oil, drained - oil retained, tomatoes chopped)
- 2 cloves garlic cloves (finely chopped)
- 2 Zucchini (grated)
- 0.333 cup dry white wine
- 0.333 cup vegetable stock
- 1.333 cups sheep cheese (diced)
- 3 sprigs Basil (leaves removed)
Preparation steps

Cook the spaghetti in boiling salt water until al dente.

Heat 2 tbsp of the tomato oil in a pan and fry the garlic. Add the courgettes and the tomatoes, fry for a few minutes and then quench with the wine.

Add the stock and simmer on a medium heat for around 5 minutes. Season with salt and ground black pepper.
4.
Drain the pasta and add it to the vegetables in the pan. Mix well and transfer to plates. Serve topped with the cheese and the basil.
