Preparation steps

1.
Stir together the lemon juice and olive oil.

Peel the oranges and remove all the white pith. Slice the flesh, catching the juice in a bowl.
3.
Add the juice to the olive oil mixture and season to taste with salt and pepper.
4.
Stir the onions, oranges and olives into the marinade and leave to stand for 20 minutes before serving, garnished with mint.
