6 ½ ozs Spelt flour
½ tsp salt

1 Bowl, 2 piece Plastic wrap, 2 Non-stick pans, 1 Rolling pin

Preparation steps

1.

Put cornflour together with wholemeal spelt flour and salt in a bowl, knead with 7 ounces of hot water. The dough should be firm and no longer sticky, add more water if necessary.

Cover the dough and let it rest for about 20 minutes.

Divide the dough into 8 portions, form into balls and press flat between two cling film sheets using a heavy pot or pan.

4.

Bake in a coated pan without oil for about one minute on each side at medium heat. Remove from the pan and place over a rolling pin to pre-form the flat cakes.

5.

Hang tacos over an oven rack and put them in the cold oven at 390°F, bake for 10 minutes, then turn off the oven and let them cool down with the door open.
