Compared to the classic tiramisu recipe with flavored ladyfingers and foam cream, this dessert contains little fat. In addition, fresh (or frozen) raspberries provide the body with potassium, which keeps the body water content in balance, and vitamin C, which keeps the immune system healthy.
If you want to do without alcohol, use more cherry juice instead of coffee liqueur. This creamy tiramisu also tastes great with other berries, such as blueberries or strawberries.

- 3 Tbsps Coffee liqueur
- 3 Tbsps Cherry juice
- 10 Ladyfinger
- 12 ozs Raspberries
- 11 ozs Quark
- 1 Vanilla bean
- 4 ozs Mascarpone
- 2 ozs powdered sugar
- 2 Tbsps cocoa powder

Preparation steps
Mix together the coffee liqueur and cherry juice.
Line the bottom of an 18 x 18 cm (approximately 8 x 8 inch) baking dish with ladyfingers and sprinkle with the liqueur-juice mixture. Rinse fresh raspberries gently.
Beat the quark until creamy, about 5 minutes.
Split the vanilla bean lengthwise and scrape out the seeds with a sharp knife. Stir the mascarpone, powdered sugar and vanilla into the quark until smooth.
Spread one-third of the cream into the baking dish in an even layer.
Reserving some for garnish, sprinkle raspberries over the cream, then spread the remaining cream in another layer on top. Refrigerate until set, at least 2 hours. Serve garnished with remaining berries and dusted with cocoa powder.
