60 grams Buckwheat flour
40 grams Pastry flour
salt
10 grams fresh Yeast
125 milliliters lukewarm milk
2 Tbsps melted butter
2 eggs
clarified butter
400 grams Smoked salmon (thinly sliced)
50 grams Sour cream
Dill (for garnish)
lemon zest (for garnish)

Preparation steps

1.

Separate eggs. Mix flour and buckwheat flour. Dissolve yeast in milk and mix with melted butter, egg yolks and some salt. Add liquid mixture into flour; cover and let rise in a warm place.

Whisk egg whites until stiff and fold into dough before baking.

Heat some butter in a pan, put in a tablespoon dough, flatten and fry on both sides until golden brown. Remove from pan and keep warm.

4.

To serve blinis, spread with some creme fraiche, roll salmon slices and place on top of creme fraiche. Garnish with dill and lemon zest.
