This delicious fish recipe is brain food at its best, thanks to fistein from cucumber, which supports brain performance, and omega-3 fatty acids from salmon, the perfect lubricant for neurotransmitters and nerve cells. If your meatball dough is still too wet, you can add more corn flour or wholemeal breadcrumbs. This binds liquid and the dough becomes firmer. You can also replace the corn flour completely with breadcrumbs. A sour cream dip goes well with the smoked fish burgers. For this, stir about 300 grams of low-fat sour cream with water or milk until smooth. Season with salt, pepper and dill.

- 1 White roll (day-old)
- 1 scallion
- 1 red chili pepper
- 2 Tbsps butter
- 22 ozs Smoked salmon
- 2 Tbsps chopped Dill
- 1 egg
- 1 egg yolk
- 4 Tbsps Cornmeal
- salt
- peppers (from the mill)
- 4 Tbsps vegetable oil
- For cucumbers
- 2 Cucumber
- 2 yellow onion
- 2 Tbsps White vinegar
- 1 pinch salt
- Red pepper flakes (to taste)
- sugar (to taste)
- For garnish
- 2 Tbsps Dill
Preparation steps
Preheat oven to 175°F. Soak bread in cold water.
Rinse scallion, cut off ends, and finely chop. Rinse chile pepper, halve, remove seeds and finely chop. Sauté scallion and chile pepper together in melted butter and let cool.
Cut 4 small slices from fish and set aside. Chop remaining fish.
Squeeze bread well and mix with steamed vegetables, dill, egg, egg yolk, cornmeal and chopped fish. Mix into a smooth dough and season with salt and pepper.
With moistened hands, form 12 patties.
Heat 2 tablespoons oil in a pan, fry patties in portions until golden yellow, 3-4 minutes on each side. Keep finished patties warm in oven.
Peel cucumbers, cut in half lengthwise, remove seeds and cut into slices. Peel onions, halve, cut into strips and fry in a little oil.
Add cucumber slices, toss briefly, pour in vegetable broth and vinegar and cook for 3-4 minutes. Season with salt, pepper flakes and sugar.
Place three patties and some cucumber slices on a plate and garnish with a slice of salmon and some dill to serve.
