- 1 Tbsp good-quality olive oil
- 2 cups Smoked Sausage
- 2 cups sliced Mushrooms
- 2 cloves garlic cloves (peeled and minced)
- 8 fresh eggs
- ¼ cup heavy cream
- 1 tsp freshly ground Black pepper
- ½ tsp salt
- 1 cup Cheddar cheese (grated)
Preparation steps

Preheat oven broiler.

Heat the oil in 10-inch nonstick, ovenproof skillet. Add sausage and saute until it begins to brown, about 3 minutes. Add mushrooms and saute until golden, about 3 additional minutes. Stir in garlic and cook until fragrant, about 30 seconds.

Combine the eggs, heavy cream, salt and pepper in a blender, process until frothy. Pour the egg mixture into the skillet with the sausage mixture and cook, undisturbed, until the sides and bottom are set but center is loose, about 4 minutes.

Sprinkle cheese over the top and place skillet under broiler and cook until mixture is just set on top and cooked through, about 3 to 4 minutes. Cool 2 minutes, slice and serve.
