- 2 small Cucumber
- 2 shallots
- 5 stalks Dill
- 2 Tbsps butter
- 2 Tbsps White vinegar
- 2 Tbsps Crème fraiche
- 2 tsps Horseradish (from a jar)
- salt
- white freshly ground pepper
- 4 smoked trout (each about 250 g)
Preparation steps

Peel the cucumber, cut in half lengthwise, remove the seeds and slice. Peel and finely chop the shallots. Rinse the dill and shake dry. Reserve 4 dill sprigs for garnish. Finely chop the rest.

Melt the butter in a skillet. Add the shallots and cook until translucent. Add the cucumbers and cook over medium heat for 2 minutes.

Stir the vinegar, creme fraiche and horseradish into the cucumber mixture, and simmer covered for 2 minutes. Add the chopped dill, and season with salt and white pepper to taste.

Divide the cucumber mixture between 4 plates. Place a trout fillet on top of each and garnish with the reserved dill springs. Serve immediately.
