Preparation steps

Clean mushrooms. Rinse scallions. Finely dice mushrooms, scallions and gherkins. Whisk lemon juice with mustard and olive oil. Season with salt, pepper and parsley. Toss mushroom mixture with the vinaigrette.

Top the trout fillets with mushroom tartare and serve sprinkled with freshly grated horseradish.
