- 75 grams button Mushroom
- 2 scallions
- 1 Pickled cucumber
- 1 tablespoon lemon juice and ever olive oil
- 1 tsp medium hot Mustard
- Salt and peppers
- 1 tablespoon chopped dill and chopped parsley
- 4 smoked trout (300 grams)
- 1 Tbsp grated Horseradish
Preparation steps
1.
Clean mushrooms. Rinse scallions. Finely dice mushrooms, scallions and gherkins. Whisk lemon juice with mustard and olive oil. Season with salt, pepper and parsley. Toss mushroom mixture with the vinaigrette.

Top the trout fillets with mushroom tartare and serve sprinkled with freshly grated horseradish.
