Preparation steps

1.

Rinse snow peas, trim and blanch in a pot of boiling salted water for 3-4 minutes. Drain, rinse with cold water and drain again.

2.

For the salad dressing, peel shallots, dice and place in a salad bowl. Add vinegar, salt and pepper, mustard, mix and gradually stir in oil.

3.

Peel carrots and kohlrabi and cut into thin long strips. Mix snow peas, carrots and kohlrabi immediately with the vinaigrette. Arrange salad on plates and serve.
