Preparation steps

Rinse and dry the mint, then remove the leaves.

Remove the snow peas from the pods, and place them in a blender. Puree with the lemon juice, orange juice, mint, and oil until thick and creamy.

If necessary, add enough water to reach your desired consistency. Season to taste with salt and pepper. This can be served as a dip or as a spread.
