- 1 cup self-rising flour
- 1 tsp Soy flour
- ¼ cup water
- 1 tsp salt
- 1 Tbsp chopped parsley
- 14 ozs potatoes (grated)
- 1 carrot (grated)
- 1 Zucchini (grated)
- 1 cup chopped Asparagus
- 1 onion (finely chopped)
- 1 Tbsp chopped sun-dried tomatoes
- vegetable oil (for deep frying)
- To serve
- soy yogurt dip
- chopped sun-dried tomatoes
- salad
Preparation steps
1.
Beat together the flours, water and salt in a mixing bowl until smooth and thick.

Stir in the parsley and vegetables.
3.
Heat the oil in a fat fryer or deep heavy-based pan and fry spoonfuls of the mixture in batches until crisp and golden. Drain on absorbent kitchen paper.
4.
Serve with soya yoghurt dip, chopped sun-dried tomatoes and salad leaves.
