Preparation steps

1.

Rinse spare ribs, pat dry, put in a pot and pour water until they are covered, bring to a boil. Peel and halve onion, peel one garlic clove and add to the pot. Simmer for about 30 minutes. Heat oil in a pan. Peel and chop onion and saute until translucent.

2.

Add peeled and squeezed through a garlic press garlic and saute for a few seconds. Add broth and orange juice and reduce slightly. Add ketchup, tomato paste, honey, mustard, soy sauce and Worcestershire sauce, mix everything in a bowl. Add paprika, lemon juice and ginger and season with salt, pepper and a dash of Tabasco.

3.

Remove spareribs from the pot and place on a hot grill. Brush with barbecue sauce and grill for about 15-20 minutes, turning meat occasionally. Baste with marinade often. Divide spareribs into individual ribs and arrange on plates. If desired, serve with coleslaw.
