Like most other types of nuts, macadamias score with their high content of unsaturated fatty acids, which are good for the heart. Instead of macadamias, the spelt cantuccini can also be baked quite classically with almonds. Alternatively, hazelnuts are also very suitable.

- 5 ¼ ozs Macadamia Nuts
- ½ Vanilla bean
- 9 ozs Spelt flour (Type 630)
- 1 tsp Baking powder
- 4 ¼ ozs Raw cane sugar
- ½ organic lemon
- 1 pinch salt
- 1 ¾ ozs butter
- 2 eggs
Preparation steps
Coarsely chop the macadamia nuts. Cut vanilla bean in half lengthwise and carefully scrape out the pulp with a knife.
Mix flour with baking powder, sugar, vanilla pulp, lemon zest and 1 pinch of salt. Mix in butter. Then add eggs and incorporate. Knead the nuts into the dough. Form 4 rolls of the same thickness, approx. 1.5 inches Ø, and chill for 30 minutes.
Place the rolls with sufficient spacing on a baking tray covered with baking paper and bake in a preheated oven at 200 °C / 400 °F for approx. 15 minutes.
Then allow to cool for approx. 10 minutes. Then cut into slices about 3/4 inches thick and bake the spelt cantuccini at 120 °C / 250 °F for 10-15 minutes until golden brown. Allow to cool completely.
