Tomatoes can score points with their abundance of Lycopene which is one of the carotenoids and helps, among other things, to protect the body from harmful free radicals. The olive oil in spelt focaccia also has many health benefits. For example, it consists of 80 percent polyunsaturated fatty acids, which have a beneficial effect on cholesterol levels and blood pressure.
If desired, you can add other vegetables of your choice to the spelt focaccia such as zucchini or eggplant.
Preparation steps
Combine spelt flour, water, 2 tablespoons oil, yeast and salt in a bowl and knead well for 10 minutes. Cover and let rise at room temperature for 3 hours. Meanwhile, stretch and fold the dough with wet hands every 30 minutes for the first 2 hours.
Place dough on a baking sheet lined with parchment paper. Add remaining olive oil and massage into the dough, pushing it apart to form a 1-inch thick patty. Cover and let rest for 45 minutes.
Meanwhile, peel onion and cut into strips, clean tomatoes, wash and slice.
Top the focaccia with onions and tomatoes and bake in a preheated oven at 220 °C / 425 °F for 15-20 minutes.
Wash oregano and shake dry. Garnish spelt focaccia with oregano leaves and serve.
