With spelt flour, many nutrients come into play including magnesium and phosphorus. Magnesium improves nerve and muscle functions while phosphorous is important for the structure of bones and teeth. Additionally, spelt flour provides slightly more protein than its close relative, wheat.
Depending on your preference, you can also add other spices to the dough. Not only caraway, but also aniseed, fennel and coriander seeds are typical bread spices that would work well in this recipe!

- 8 ⅘ ozs Spelt flour
- 8 ⅘ ozs Pastry flour
- 1 tsp ground Caraway
- ½ cube fresh Yeast (21 grams)
- 1 tsp salt
- 6 ozs vegan Whole Wheat Sourdough Starter (from a health food store)
- Pastry flour (to work)
Preparation steps
Mix the whole-grain spelt flour and the all-purpose flour with the ground caraway seeds in a bowl. Make a well in the center and crumble the yeast into it. Add about ¼ cup of lukewarm water into the well, stir in some flour and let rise covered for about 30 minutes.
Add the salt, whole wheat sourdough starter, and about 1¾ cups of lukewarm water to the flour mixture, and knead until the dough leaves the edges of the bowl. Cover and let rise in a warm place for 30 minutes.
Knead the dough well again on a floured surface, divide into 15 portions, and shape each portion into balls. Place the dough balls on a floured baking tray. Carve a diamond pattern over each dough ball. Bake in a preheated oven at 400°F until golden brown, about 25 minutes. Remove from the oven and let cool before serving.
