- 400 grams Spelt Tagliatelle
- salt
- 2 bunches parsley
- 2 garlic cloves
- 2 Anchovy fillet (in oil)
- 150 grams pecorino romano (in one piece)
- 4 Tbsps olive oil
- freshly ground white peppers
Preparation steps

Cook the pasta according to package directions until al dente.

Rinse the parsley, shake dry and chop finely. Peel the garlic and thinly slice. Drain the anchovies and finely chop.

Cut the cheese into small chunks.

In a skillet, heat the oil and saute the garlic until translucent. Add the parsley and anchovy fillets and sauté until the anchovies have melted. Drain the pasta, and toss with the cheese and the parsley mixture. Season with pepper, toss well and serve on warmed plates.
