- For the lentil balls
- 9 ozs Red lentils
- ⅞ cup vegetable stock
- 1 egg
- 1 scallion (chopped)
- 1 clove garlic cloves (finely chopped)
- ½ bunch parsley (chopped)
- ½ bunch cilantro (chopped)
- breadcrumbs (as needed)
- ground Cumin
- salt
- cayenne pepper
- Oil (for deep frying)
- For the dip
- 1 Tbsp Peanut oil
- 1 clove garlic cloves (chopped)
- 3 Tbsps Peanut butter
- ⅞ cup Coconut milk
- cayenne pepper
- soy sauce

2 Bowls, 1 Measuring cups, 1 Small knife, 1 Teaspoon, 1 Cutting board, 1 Citrus juicer, 1 Fork, 1 Small bowl, 1 Salad server, 1 Small pot, 1 Fine grater
Preparation steps

For the lentil balls: Put the lentils and stock in a pan, bring to a boil, cover and cook for about 15 minutes until soft. The liquid should be absorbed completely. Remove from the heat and set aside.

Mix the lentils with the egg, spring onions, garlic and herbs in a blender and purée.

Mix in breadcrumbs until mouldable. Season with cumin, salt and cayenne pepper and form into balls.

Heat the oil in a deep pan and fry the balls in batches for 1-2 minutes until golden brown. Drain on kitchen paper.
5.
For the dip: heat the oil and fry the garlic until soft.
6.
Stir in the peanut butter and coconut milk and bring to a boil. Cook until thickened and reduced to the desired consistency. Season with cayenne pepper and soy sauce and pour into a gravy boat.
7.
Serve the lentil balls with the dip.
