- 1 kilogram Apricot
- 2 centimeters ginger (30 grams)
- 2 onions
- 2 small, red chili peppers
- 3 Kaffir lime leaves
- 270 milliliters Rice vinegar
- 150 milliliters Orange juice
- 1 tsp Coriander
- 300 grams cane sugar
Preparation steps

Blanch apricots, peel, halve and pit. Cut apricots into quarters, then cut 1/3 of apricots into small pieces. Peel ginger and onion, chop finely. Cut chile into thin rings. Rinse lime leaves and cut into wide strips.

Combine everything with vinegar, orange juice, coriander and sugar in a saucepan. Heat slowly while stirring. Simmer on medium heat for about 40 minutes. Pour into preserving jars, seal well. Turn jars upside down and cool. Return jars to normal position and store in a dark, cool place. Serve as needed.
