3 cups beefsteak Tomatoes
4 Tbsps herb butter
5 cups Beef fillet (cut into strips)
1 onion (finely chopped)
2 cloves garlic cloves (finely chopped)
2 green peppers (finely diced)
1 tsp Vinegar
salt

1 bunch fresh cilantro

Preparation steps

1.
Blanch the tomatoes in boiling water for 20 seconds, remove the skin and seeds, and chop roughly.

Heat the herb butter in a wide frying pan and quickly sauté the beef fillet over a high heat. Take out of the pan. Then sweat the onion and garlic in the same pan until translucent. Mix in the tomatoes and diced peppers and cook for 10 minutes.

Season with vinegar, salt and pepper, put on a lid and simmer for 10 minutes over a medium heat. Mix the meat and the meat juices into the sauce and warm for 5 minutes.

Wash the coriander, shake dry and chop finely. Season the dish and stir in the coriander.

Serve with butter baguettes (with herb butter).
