- 2 unwaxed lemons (sliced)
- 1 lemon (juice)
- 1 Tbsp honey
- 4 Chicken breasts (each approx 200g)
- 2 cloves garlic cloves (finely chopped)
- salt
- freshly ground Black pepper
- 1 Tbsp chopped thyme
- 1 dried, red chili pepper (chopped)
- To garnish
- thyme
Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Cut 4 pieces of non-stick baking paper or foil, about 4 times the size of each chicken breast, and fold each piece in half.

Divide the lemon slices between each sheet.

Mix together the lemon juice and honey.
4.
Place a chicken breast in the middle of each sheet and sprinkle with the lemon juice mixture and the garlic.
5.
Season with salt and black pepper and sprinkle with thyme. Top with the chillies.
6.
Fold the baking paper over to make a parcel, tucking the edges under to ensure no steam will escape. Place on a baking tray.
7.
Cook for 30 minutes, until the chicken is cooked through. Serve garnished with thyme.
