1 roast chicken (2.5 pounds)

4 Kaffir lime leaves
3 ½ ozs coarsely chopped Shelled peanut
2 ¼ ozs melted butter
7 ozs natural Apple juice
2 Tbsps honey

Preparation steps

Rinse lemons, rub dry, and cut in half. Rinse chicken, pat dry, and season inside and out with salt and pepper. Wash thyme. Stuff thyme, prunes, and 2 lemon halves into chicken.

Wash potatoes thoroughly and spread into a buttered roasting pan with remaining lemons, cinnamon sticks, kaffir lime leaves, and 2⁄3 of the peanuts. Place chicken breast side down in the baking dish, brush with a little butter, and roast in a preheated oven at 180 °C / 350 °F for 15 minutes.

Add apple juice and put the chicken back in the oven for a total of 50-60 minutes more, turning chicken over onto the breast side during the last 30-40 minutes, and brushing with a little butter. For the last 10 minutes of roasting, stir honey into the remaining butter and brush the chicken with it, and sprinkle with the remaining peanuts.

Season sauce with salt and pepper before serving. Remove dried fruit from chicken; carve and portion chicken. Serve dried fruit with sauce and potatoes with honey lemon chicken.
