Peel the prawns, and devein if necessary.

Heat the oil in a pan and the curry powder and sauté over a high heat for a minute.
3.
Add the prawns and sauté for 2 minutes until cooked but tender. Turn them during cooking to ensure they sauté evenly.
4.
Add the coriander and cook for a further one minute, then season.
5.
Arrange the prawns on a plate, decorated with the chives. Serve with basmati rice.
