8 ozs Snow peas

14 ozs small brown button Mushroom
1 red onion
2 garlic cloves
¾ oz ginger (1 piece)
30 ozs Spelt- whole-grain spaghetti
2 Tbsps sesame oil
2 Tbsps Lime juice
3 Tbsps soy sauce
peppers
½ tsp Sambal oelek
2 Tbsps walnut kernels

Preparation steps

Clean sugar snap peas, wash, cut lengthwise into narrow strips and place in boiling salted water for about 4-5 minutes. Then drain, rinse with cold water and let drain. In the meantime, clean mushrooms and cut into slices. Peel and chop onion, garlic and ginger.

Cook spaghetti in plenty of boiling salted water according to package directions until al dente, about 12 minutes.

Meanwhile, in a large frying pan or wok, heat oil. Sauté onion, garlic and ginger over medium heat for 4 minutes. Add mushrooms and sugar snap peas, sauté for 3 minutes. Deglaze with lime juice and soy sauce, season with salt, pepper and sambal oelek.

Drain the pasta, let it drain. Chop walnuts and mix with vegetables and sauce and season with salt and pepper.
